Gluten Free World

I have to say its pretty tough having a food issue. The past six months I was dairy free for Ry-man, and I found out that EVERYTHING has dairy or some sort of milk product in it. It is crazy. In a way though, it helped me prepare for a food that I would have to avoid for the rest of my life- gluten. Like my mom, I have celiac disease. In a nutshell, it is an auto-immune disease. Whenever I eat gluten (wheat, barley, rye, spelt), my intestines will be damaged, which could lead to more serious issues. Even just the tiniest bit damages your intestines. Anyway…I found out almost a month ago and have been trying hard to remain gluten free. Thank the Lord that Ry’s milk allergy has subsided and I have the liberty to enjoy cheese and other dairy products. But wow, it is overwhelming to even think about at each meal what could have gluten in it. I suddenly have a deep respect for people who have not had the “normal” life. For the people who have all sorts of allergies or handicaps or disabilities. I admit I’ve been naive and I apologize for being so. This has opened my eyes to a whole new world.

  1. This seems to be fairly common these days. Or maybe I just know a lot of people who can't eat gluten…sucks!!
